Edmonton chef heads to Canadian Culinary Championship

Local chef Tyson Wright, winner of the Edmonton-region Great Kitchen Party contest last October, is headed to Ottawa for the national championship later this month.

Wright, an industry veteran of 23 years, is the resident chef of the Old Red Barn in Leduc and the Strada Artisan Bakery in Camrose.

“I love cooking over fire and bring in the passion of the prairies to each and every bite,” says Wright, who will be representing Edmonton.

His dish, a slow-cooked bison cheek, called the “Heart of the Prairies” won him a gold medal in Edmonton last October and a spot at the Canadian Culinary Championship to be held on Jan. 30 and 31 in Ottawa.

“Being an Alberta boy kind of led me to bison. Every summer me and my family we go to the Saskatoon farm, and we pick Saskatoons so those made it on to the dish,” Wright says.

He says representing Edmonton and the Prairies on the national stage means a lot to him.

“This was my one shot to really show what we had out here and represent the Prairies,” Wright says.
